It’s been a while since I blogged. Work, the summer holidays, work… I’ve been preoccupied!
But that’s not to say I haven’t been making and baking things blog-worthy, it’s just been a case of finding the time to get online and upload some recipes and photographs.
So, my first blog post in over 4 months and it’s the same topic of conversation as my very last blog post - madeleines! I’m a fan. They’re just so light and fluffy and delicious and the shape of them makes me happy. And they’re not too hard to make.. she says, the ones I baked yesterday were slightly over-baked but only in colour, the texture was fine. And I think that’s because I baked them on 200 degrees rather than 180, because the recipe told me to and for once I followed the recipe to the letter.

You will need:
2 eggs (I use organic and they come in a box of mixed weight, I can’t be more specific on the weight because I don’t know!)
100g caster sugar
1 lemon, juice and zest
3/4 teaspoon baking powder
100g melted butter
You then have to:
Whisk together the eggs and sugar in a bowl until frothy, add in the melted butter and whisk again
Lightly whisk in the remaining ingredients
Leave to stand for 20/30 minutes, in the fridge if you have space, before adding to the madeleine tray. A note on the baking tray - I don’t butter or grease mine because I have never needed to and I think the butter makes the outside too crispy, your choice though!
As discussed above, I baked them on 200 for 8 minutes but I think baking them on 180 for 9/10 minutes would have been better. Your oven, your rules!
They’re good to eat while still warm and definitely best eaten on the same day (and not just because I am greedy!)
